CARROT, APPLE AND RAISIN CAKE

Dear friends,

More and more I am getting requests from abroad, so I hope you'll like this.

INGREDIENTS

225 gr/80oz self-raising flour
1/2 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
5 tbsp vegetable oil
grated zest of 1 orange + 4 tbsp juice
140 gr/5oz light muscovado sugar
140 gr/5oz finely grated carrot
1 medium apple, peeled, cored and grated
85 gr./3oz raisins
icing sugar, for dusting

Preheat the oven to 180°C. Butter a pan. Mix the flour, baking powder, salt and cinnamon together in a large bowl.




In a separate bowl mix together oil, orange juice and sugar.



Add the orange mixture to the flour along with the grated carrot, apple, orange zest, raisins and stir until really well mixed. Spoon into the prepared tin.




Bake for 50 minutes, until the cake pulls from the side of the tin.
Cool on a rack before removing from tin.
Dust with icing sugar and serve!
